Slow Cooker Chicken with Potatoes, Carrots & OnionsA comforting one-pot chicken dinner with tender vegetables and a savory herb sauce.Ingredients4 chicken thighs or drumsticks4 medium potatoes, cut into chunks3 carrots, cut into large pieces1 large onion, cut into chunks3 cloves garlic, minced1 cup chicken broth2 tbsp olive oil1 tsp paprika1 tsp dried thyme1 tsp Italian seasoning½ tsp garlic powderSalt and black pepper to tasteInstructionsSeason the chicken with salt, pepper, paprika, thyme, and garlic powder.Heat olive oil in a pan and brown the chicken for 2–3 minutes per side. This step is optional but gives it a beautiful golden color.Put the potatoes, carrots, onion, and garlic in the slow cooker.Place the chicken on top and pour in the chicken broth.Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is fully cooked and the vegetables are tender.For extra-crispy chicken skin, place the cooked chicken under the broiler for 3–5 minutes before serving.Serve warm with some of the cooking juices spooned over the chicken and vegetables.
