Ingredients
- 2 cups mixed dried fruit (raisins, cranberries, chopped dates, or mixed fruit)
- 2 cups self-rising flour
- 1 cup brown sugar
- 1 tsp cinnamon
- 2 large eggs
- 1 cup milk
- ½ cup melted butter
- 1 tsp vanilla extract
- Optional: ½ cup chopped nuts (walnuts or pecans)
Instructions
- Prepare the fruit
- Place the dried fruit in a bowl.
- Pour warm water over it and let soak for 10–15 minutes.
- Drain well.
- Mix the batter
- Preheat oven to 180°C (350°F).
- Grease and line an 8-inch (20 cm) round cake pan.
- In a large bowl, combine flour, brown sugar, and cinnamon.
- In another bowl, whisk together eggs, milk, melted butter, and vanilla.
- Combine
- Add the wet ingredients to the dry ingredients.
- Fold in the soaked fruit and nuts (if using).
- Mix until just combined.
- Bake
- Pour batter into the prepared pan.
- Bake for 45–55 minutes, or until a skewer inserted in the center comes out clean.
- Serve
- Let cool for 15 minutes before slicing.
- Enjoy warm with butter, cream cheese, or a cup of tea or coffee.
Tips
- Add grated apple or carrot for extra moisture.
- Replace part of the milk with orange juice for a fruity flavor.
- Store covered for up to 4 days, or freeze slices for quick breakfasts.
