Ingredients

  • 2 cups mixed dried fruit (raisins, cranberries, chopped dates, or mixed fruit)
  • 2 cups self-rising flour
  • 1 cup brown sugar
  • 1 tsp cinnamon
  • 2 large eggs
  • 1 cup milk
  • ½ cup melted butter
  • 1 tsp vanilla extract
  • Optional: ½ cup chopped nuts (walnuts or pecans)

Instructions

  1. Prepare the fruit
    • Place the dried fruit in a bowl.
    • Pour warm water over it and let soak for 10–15 minutes.
    • Drain well.
  2. Mix the batter
    • Preheat oven to 180°C (350°F).
    • Grease and line an 8-inch (20 cm) round cake pan.
    • In a large bowl, combine flour, brown sugar, and cinnamon.
    • In another bowl, whisk together eggs, milk, melted butter, and vanilla.
  3. Combine
    • Add the wet ingredients to the dry ingredients.
    • Fold in the soaked fruit and nuts (if using).
    • Mix until just combined.
  4. Bake
    • Pour batter into the prepared pan.
    • Bake for 45–55 minutes, or until a skewer inserted in the center comes out clean.
  5. Serve
    • Let cool for 15 minutes before slicing.
    • Enjoy warm with butter, cream cheese, or a cup of tea or coffee.

Tips

  • Add grated apple or carrot for extra moisture.
  • Replace part of the milk with orange juice for a fruity flavor.
  • Store covered for up to 4 days, or freeze slices for quick breakfasts.
